2 tbsp olive oil
1 tbsp fresh ginger, peeled and grated
1 onion, peeled and chopped
3 garlic cloves, peeled and crushed
1 tsp ground cumin
200g frozen peas, defrosted
500g beef mince
1 egg, beaten
100g fine breadcrumbs
Sea salt and black pepper
1/2 fresh red chilli, deseeded and finely chopped
2 tsp ground coriander
2 tbsp mint, chopped
Heat the olive oil in a large frying pan, fry the ginger, onions, garlic and ground cumin for approximately 3 minutes until the onion is soft but not brown, then tip into a large bowl to cool. Add the peas and mix together with the beef, egg, breadcrumbs, cooked onions and season with a little sea salt and black pepper. Mix well and add in the finely chopped red chilli, coriander and mint. Shape the mixture into small patties, heat the remaining oil in the frying pan and fry the patties until cooked through.
Tips: Serve with boiled basmati rice; as a starter with a yoghurt and mint dip; cold as a lunchbox item or part of a picnic.
The less water you use when cooking peas, the less vitamin C is lost. Steaming helps to conserve this vitamin.
When boiling frozen peas, add enough water to cover, bring to the boil and then cover and simmer for 3 minutes. To microwave 227 grams (8oz) of frozen peas add 15ml (1 tablespoon) of water, place in a non metallic container and cover. Cook on full power for 4 minutes (750W) or 4 1/2 minutes (650W)
